Crispy Chicken Skin
Nothing compares to chicken skin. Given that it's likely the best component of any chicken dinner, why not make it the centerpiece rather than ending up in the bin!

- Baking paper
Ingredients
- chicken skin
- salt & pepper
Instructions
- Preheat the oven to 180°C
- Lay the skin stretched out flat on a baking paperon a baking sheet. Sprinkle with a little salt and pepper
- Lay a second sheet of baking paper over the skins and weigh down with another tray or other flat ovenproof dish
- Place in the oven for 10–15 minutes, after which time they should be golden brown and crisp. Be careful not to let them colour too much or they will taste bitter
- Snap into bite size pieces and scatter over the Smokey Spanish Chicken!
