Greek Vegetable Couscous Salad

Ingredients:

50 grams Feta cheese
20 grams parsley
2 tsp Greek spice mix
2 roma tomato
2 tbsp pitted kalamata olives
1 cloves garlic
1 cups pearl couscous
1 Lebanese cucumber
1 red capsicum
0.5 red onion
1 tsp red wine vinegar*
salt & pepper*
extra virgin olive oil*

Prep:

– pop a saucepan of salted water on to boil
– peel, halve and thinly slice red onion
– wash and chop capsicum, cucumber and tomatoes
– wash and halve olives
– wash and remove leaves from parsley
– peel and crush garlic

Method:

1. Add coucous to boiling water and simmer, covered, for 10-12 minutes, or until tender. Test frequently, because cooking times can vary. Remove from heat, and drain. In the same saucepan, heat olive oil over a medium heat. Add spice mix cook, stirring, for 1 minute. return couscous to the pan and stir well. Remove from the heat, cover and set aside.
2. To make dressing, whisk garlic, oil and vinegar with salt & pepper until combined.
3. Place cucumber, onion, capsicum, tomatoes, olives and parsley in a bowl. Add couscous. Toss well. Crumble over feta. Drizzle with dressing.
