Squeeze juice from lemon. Combine lemon juice, olive oil, garlic, beans and water in food processor until smooth. Season well.
Combine mince with spice mix in a bowl. Mix well. Heat an oiled, extra large, non-stick frying pan over a high heat. Add mince in 300g batches. Cook, breaking up mince with a wooden spoon, for about 2 minutes, or until browned. Remove.
Heat same oiled frying pan over a medium heat. Add onion and zucchini. Cook, stirring occasionally, for about 3 to 6 minutes, or until browned. Return mince. Cook, stirring occasionally, for about 2 minutes, or until zucchini is tender.
Combine tomatoes, cucumbers and coriander. Serve with mince, sauce, pita pockets and lemon wedges.
