Spiced Beef with Garlic White Bean Sauce

Ingredients
  

  • 300 g beef mince
  • 200 g cannellini beans drained and rinsed
  • 20 g coriander wash and remove leaves
  • 1 zucchini washed and chopped
  • 2 tomatoes washed and chopped
  • 1 tbsp Middle Eastern spice mix
  • 1 Lebanese cucumber washed and thickly sliced
  • 1 red onion peeled and chopped
  • 1 clove garlic peeled
  • 1 lemon halved and cut half into wedges
  • 4 pita pocket bread rolls
  • 1 water pantry item
  • 2 tbsp extra virgin olive oil pantry item
  • salt & pepper pantry item

Instructions
 

  • Squeeze juice from lemon. Combine lemon juice, olive oil, garlic, beans and water in food processor until smooth. Season well.
  • Combine mince with spice mix in a bowl. Mix well. Heat an oiled, extra large, non-stick frying pan over a high heat. Add mince in 300g batches. Cook, breaking up mince with a wooden spoon, for about 2 minutes, or until browned. Remove.
  • Heat same oiled frying pan over a medium heat. Add onion and zucchini. Cook, stirring occasionally, for about 3 to 6 minutes, or until browned. Return mince. Cook, stirring occasionally, for about 2 minutes, or until zucchini is tender.
  • Combine tomatoes, cucumbers and coriander. Serve with mince, sauce, pita pockets and lemon wedges.
