Spiced Beef with Garlic White Bean Sauce
Easy mid week dinner with minced beef
Ingredients
- 300 g beef mince
- 200 g cannellini beans drained and rinsed
- 20 g coriander wash and remove leaves
- 1 zucchini washed and chopped
- 2 tomatoes washed and chopped
- 1 tbsp Middle Eastern spice mix
- 1 Lebanese cucumber washed and thickly sliced
- 1 red onion peeled and chopped
- 1 clove garlic peeled
- 1 lemon halved and cut half into wedges
- 4 pita pocket bread rolls
- 1 water pantry item
- 2 tbsp extra virgin olive oil pantry item
- salt & pepper pantry item
Instructions
- Squeeze juice from lemon. Combine lemon juice, olive oil, garlic, beans and water in food processor until smooth. Season well.
- Combine mince with spice mix in a bowl. Mix well. Heat an oiled, extra large, non-stick frying pan over a high heat. Add mince in 300g batches. Cook, breaking up mince with a wooden spoon, for about 2 minutes, or until browned. Remove.
- Heat same oiled frying pan over a medium heat. Add onion and zucchini. Cook, stirring occasionally, for about 3 to 6 minutes, or until browned. Return mince. Cook, stirring occasionally, for about 2 minutes, or until zucchini is tender.
- Combine tomatoes, cucumbers and coriander. Serve with mince, sauce, pita pockets and lemon wedges.
